Age of vines: 16 years (both sauvignon blanc & semillon)
Harvested: Sauvignon Blanc 6/04/05. 22.3 Brix, pH 3.1, TA 8.2g/l
Semillon 15/04/05 21.9 Brix, pH 3.0, TA 8.4 g/l
The 2005 Fume Blanc is a blend of sauvignon blanc (80%) and semillon (20%) which was all fermented and matured in oak.
The sauvignon blanc juice was settled for 5 days before put into oak and seeded with two different yeast cultures.
The semillon was treated like our chardonnay, with a high solid warm ferment which started off as a wild ferment and then was seeded with two different yeast cultures in 500 litre puncheons.
The wines were left in barrels until Feb 06 and regularly lees stirred to achieve a creamy mouthfilling mid palate.
After blending the wine was lightly fined and filtered before bottling.
